Happy Thanksgiving!!

Today I have enjoyed cooking my part of the Thanksgiving meal. The grocery trip this morning was another story - how crazy was I to wait until the last minute to buy my ingredients?! I thought I would share the recipes I made (mainly because I am avoiding the huge mess that I have to clean up).

Mac & Cheese (omitted the last 5 ingredients because this dish is for the kids)
Mashed Potatoes (secret: add warm cream to potatoes then reserve some for the day of)
Cranberry Sauce (first time to make homemade - it was so easy)
Green salad w/ Pepper Jelly Vinaigrette (my favorite salad ever!)

In the morning we are driving to Oklahoma for a different kind of holiday. We are going to Jeremy's parent's land to celebrate a relaxing Thanksgiving with his parents and his brother's family. The boys are so excited about fishing, exploring, hanging out with their girl cousins and sleeping in my parent's RV tommorrow night. As we were talking this afternoon about the next two days, I started to think about what I am thankful for this year. I am looking forward to spending some time alone tomorrow to sit and reflect on all my blessings.

isn't it amazing how beautiful solitude becomes when you're a mommy? that reflecting time is so healthy, getting your thoughts and your heart sorted out so you can enjoy all the amazing blessings you've been given is such a treat.

Mmmmm...I need to check out your recipes.

Homemade cranberry sauce is easy and delicious. We opted for the canned kind this year because I definitely threw my meal together at the last minute.
